Haven't been on the blog in a few months...took a little siesta but now I plan on trying to at least post something monthly. I have a nice week stretch off work so I decided to use some of my free time to create some new healthy meals. Here is my first of hopefully many. Brandon and I have been trying to eat healthier meals and this inspired me to try new things. I'm not a huge recipe follower...so I just made this up.
Harvest blend - I picked up a bag of "Harvest Blend" grains at TJ's the other day. It's basically a medley of orzo, couscous, baby garbanzo bean, red quinoa, and lentil. Yummy even when eaten plain.
1/2 package of Trader Joe's Herveat Blend Medley
- I used low- sodium chicken broth to cook it -
Chopped grape tomatoes
Chopped bell peppers
Chopped kalamata olives
Balsamic vinegar and EVOO
Chill and serve.
Makes a delicious healthy meal or side! Enjoy.
